During our first meeting, we shared a recipe that’s perfect for anyone juggling a busy schedule or going through cancer treatments—times when you need simple, nourishing meals to make life a little easier.

And now, we’re excited to share it with you: a sheet pan meal that’s hearty, hassle-free, and perfect for those nights when you just don’t want to spend too much time in the kitchen.

What Easy Recipe Did We Cover in August?

At our very first Cookbook Club, we focused on easy weeknight dinners that take the stress out of cooking. Cherylanne Skolnicki, founder and CEO of Brilliant Balance, shared a sheet pan meal that’s simple, flavorful, and completely customizable.

Why We Love Sheet Pan Meals

There’s a lot to love about sheet pan meals, and here’s why they’re so helpful:

  • Minimal Cleanup: One pan, one quick clean-up. You’ve got enough to handle without washing a bunch of dishes!

  • Simple Prep: Just chop, drizzle, and bake. It’s as easy as it gets.

  • Very Versatile: Got different veggies or proteins? No problem. You can make this with whatever you’ve got on hand!

  • Nutritious and Balanced: With fresh veggies and lean proteins, it’s a healthy way to make sure you’re getting all the good stuff.

  • Yummy Leftovers: Make a big batch, and you’ve got lunch or dinner covered for tomorrow, too!


Easy Sheet Pan Meal Recipe: Chicken Sausage and Vegetables

This easy weeknight dinner is packed with flavor and requires just a few simple ingredients. Feel free to mix it up with items in your fridge or whatever fits your dietary requirements.

Ingredients:

  • 1 package of chicken sausage (Cherylanne used Aidells Chicken & Apple Sausage)

  • 2 zucchini

  • 2-3 bell peppers

  • 1 onion

  • A handful of cherry tomatoes

  • Olive oil

  • Salt and pepper

Directions:

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper (for even easier cleanup!).

  2. Slice the chicken sausage into diagonal pieces and arrange them on the sheet pan.

  3. Slice the zucchini, bell peppers, onion, and cherry tomatoes. Add them to the sheet pan. (For access to pro tips on how to slice and dice these veggies, be sure to join our Cookbook Club!)

  4. Drizzle everything with olive oil and sprinkle with salt and pepper.

  5. Roast for about 20 minutes, stirring halfway through to ensure even cooking.

  6. Optional: Sprinkle fresh herbs like parsley or basil after roasting for a little extra flavor!

Remember: You can easily customize this recipe by using your favorite veggies or whatever you have on hand. Try swapping in sweet potatoes, broccoli, or even mushrooms!

Serve it as-is or pair it with quinoa, rice, or crusty bread for a more filling meal. It’s easy, flavorful, and takes hardly any effort!
