Thank you to everyone who joined our September Cookbook Club! 🏈 We had a ball huddling up and sharing touchdown-worthy recipes that will have everyone cheering! It’s such a joy to connect as a community that thrives on coming together over good food. A special thanks to Yeliz, a Culinary Care patient turned advocate, for sharing her inspiring words on the importance of nourishment during cancer treatment. 3-Ingredient Spicy Chicken Chili
Ingredients:
1 lb shredded chicken (poached, rotisserie, etc.)
1 can spicy chili beans (including sauce, such as Brooks brand)
1 can diced tomatoes with chilies
Directions:
Mix all ingredients in a pot and heat through.
Have fun with toppings like cheese, chopped onions, pickled jalapeños, diced avocado, and corn chips.
Layered Chili/Bean Dip
Ingredients:
Cream cheese
Refried beans
Chili
Cheese of choice
Directions:
Spread cream cheese on the bottom of a baking dish.
Layer refried beans, chili, and top with cheese.
Bake until heated through and garnish with sliced green onions, black olives, and pickled jalapeños.
Portobello Mushroom Sloppy Joes
Ingredients:
1 tbsp vegan butter
1 tbsp olive oil
10 oz baby portobello mushrooms, diced
1/3 green bell pepper, diced
1/2 medium onion, diced
1 jalapeño, diced (optional)
3 cloves garlic, minced
2/3 cup ketchup
1 tbsp tomato paste
1 tbsp brown sugar
1 tbsp molasses
1 tbsp mustard
3/4 tsp chili powder
2-3 tbsp soy sauce
1/4 tsp black pepper
Directions:
Prepare the sauce: Whisk together ketchup, molasses, brown sugar, mustard, chili powder, soy sauce, and black pepper. Adjust seasoning to taste.
Cook the vegetables: Heat butter and olive oil in a pan. Sauté bell pepper and jalapeño until soft. Add onions and garlic, cooking until translucent.
Add the mushrooms: Cook until mushrooms are soft and moisture has evaporated.
Incorporate the sauce: Gradually add the sauce, stirring until well coated. Cook until the sauce thickens.
Note: Taste and adjust the sauce as needed. Feel free to tweak the amount of molasses and brown sugar to suit your preference.
