September: Winning Recipes for Your Game Day Lineup

Thank you to everyone who joined our September Cookbook Club! 🏈 We had a ball huddling up and sharing touchdown-worthy recipes that will have everyone cheering! It’s such a joy to connect as a community that thrives on coming together over good food. A special thanks to Yeliz, a Culinary Care patient turned advocate, for sharing her inspiring words on the importance of nourishment during cancer treatment. Recipes & resources

  • Layered Chili/Bean Dip

  • Ingredients:

  • Cream cheese

  • Refried beans

  • Chili

  • Cheese of choice

  • Directions:

  • Spread cream cheese on the bottom of a baking dish.

  • Layer refried beans, chili, and top with cheese.

  • Bake until heated through and garnish with sliced green onions, black olives, and pickled jalapeños.

  • Portobello Mushroom Sloppy Joes

  • Ingredients:

  • 1 tbsp vegan butter

  • 1 tbsp olive oil

  • 10 oz baby portobello mushrooms, diced

  • 1/3 green bell pepper, diced

  • 1/2 medium onion, diced

  • 1 jalapeño, diced (optional)

  • 3 cloves garlic, minced

  • 2/3 cup ketchup

  • 1 tbsp tomato paste

  • 1 tbsp brown sugar

  • 1 tbsp molasses

  • 1 tbsp mustard

  • 3/4 tsp chili powder

  • 2-3 tbsp soy sauce

  • 1/4 tsp black pepper

  • Directions:

  • Prepare the sauce: Whisk together ketchup, molasses, brown sugar, mustard, chili powder, soy sauce, and black pepper. Adjust seasoning to taste.

  • Cook the vegetables: Heat butter and olive oil in a pan. Sauté bell pepper and jalapeño until soft. Add onions and garlic, cooking until translucent.

  • Add the mushrooms: Cook until mushrooms are soft and moisture has evaporated.

  • Incorporate the sauce: Gradually add the sauce, stirring until well coated. Cook until the sauce thickens.

  • Note: Taste and adjust the sauce as needed. Feel free to tweak the amount of molasses and brown sugar to suit your preference.
